These delicious low carb muffins are super soft and tender. Made with coconut flour, coconut oil and eggs, they fill you more than the typical muffins. And, they are packed with cherries! The best part is it takes less than ten minutes to you whip these muffins up and get them in the oven.
Before you begin, prepare the necessary ingredients. It will only take you aroung 10 minutes or less to make a dough.
Whisk 3 eggs first, add honey and coconut oil. Mix thoroughly. In a separate bowl mix flour, salt, lemon juice and baking soda. Mix well, then combine with the egg mixture. Use spatula to get a perfect dough consistency.Ingredients
Eggs - 3 pcs
Honey - 1 or 2 tbs
Coconut oil - 3tbs
Coconut wheat flour - 35 g
Pinch of salt
Lemon juice + baking soda - 1 ts each
Fresh or frozen cherry - 200 g
Finally, add 200 g of cherries with no bones. If you use frozen cherries, let then sit at a room temperature fora while before using.
Once you mix the cherries into the dough, take a silicone mold and put the dough into it. The amount I mention here will make about six muffins. Bake in a pre-heated oven at 180 degrees for 20 minutes. It may take a bit more depending on your oven. And you're done!
